Healthy food - is there enough of it around? A friend of mine wanted to show how easy it was to make dim sum in the comfort of your home. So he set a project to make healthy dim sum accompanied by snacks and drinks.
I was asked to be part of the whole experimenting process which built up to one evening of taste testing with friends.
The first part of this test was to create the flavours for the dim sum. This involved looking at ingredients that worked well together but also looking at flavours that people may have never had in traditional dim sum.
On our list of tasty dim sum we had:
Prawn & Garlic
Prawn, Pork, Spring Onion, Garlic & Chilli
Chicken, Ginger, Sesame, Spring Onion
Pork, Ginger & Nutmeg
Turkey, Thyme, & Garlic
Haloumi & Mint
We now needed to learn about various folding techniques for the dim sum, which we referred to as the 'big hug', 'half moon', 'the crab'. All the dim sum were cooked in a bamboo steamer alternatively they can be boiled and fried. We also served the dim sum in a broth using a secret recipe.
To accompany the meal we served a variety of refreshing drinks including cucumber water, vodka ice tea and healthy savoury shot made with chicken stock.
To end the delicious meal we served up matcha (green tea) frozen yoghurt.
All the taste testers were asked to score each dish and went home with smiles and a slice of the night in their 'takeaway' box.
